I have used Old Fashioned Oats as well as Quick Oats for this, we prefer Old Fashioned Oats, but either is fine. I have only made these with Natural No Stir Peanut Butter, however, you should be able to make them with Almond Butter, or a different kind of Peanut Butter. I would just caution against using a fat free Peanut Butter as I find it doesn't seem to keep things together as well.

If you're mixing by hand, warming up the peanut butter in the microwave for 15s intervals until it's more fluid will help things come together more easily.
